I got this recipe from my cousin who got it from Mens Health. One night he came over and we cooked this for dinner and it was so good. I love fish. And the fish takes such a short time to make. The rice we made took the longest actually. We didn't do the rice that comes with the recipe I'm going to paste. We grabbed some brown rice or rice pilaf from Whole Foods and chopped up pineapple and mixed it in. We did do with it. It's great and healthy. I figured I'd contribute something for a change. We used Jack Daniels BBQ sauce and blueberry preserve. And we had 6oz fillets instead of 4. 1 Tbsp blueberry jam or jelly 2 tsp barbecue sauce 2 4 oz salmon fillets Cooking spray Salt and pepper to taste 1. Set the oven to broil. 2. In a small bowl, stir together the jam and sauce until well blended. 3. Coat a baking sheet with nonstick cooking spray. Arrange the salmon on it, sprinkle on salt and pepper, then spoon the sauce over the fillets. 4. Broil for 5 minutes, or until the fish flakes. Spoon the remaining sauce over the fillets before serving. Eat With: 1 cup steamed drizzled with tsp lemon juice; 1 cup Uncle Ben's Ready Rice, Whole Grain Brown (the kind you can microwave in 90 seconds) Makes 2 servings Per serving (including side dishes) 419 calories, 31 g protein, 59 g carbs, 6 g fat (1 g saturated), 6 g fiber, 159 mg sodium
